Healthy Raw Chocolate Snack Bars

Firstly, hello I’m still alive! It’s been a bit quiet on here lately and it’s mostly been down to starting a new job. I always find starting a new job rather stressful, even when I’m trying my hardest not to. I’ve generally been feeling rather rubbish which hasn’t helped. Anyway I decided to try and help myself by eating properly.

Healthy Energy

I am one of those people that will not eat when stressed so I’ve lost a little weight. I wanted something wholesome yet high-energy to snack on at work to counteract this, packed full of protein and definitely with chocolate as an ingredient. This recipe is very slightly adapted from the amazing Healthy Brownie Granola Bars recipe by the Minimalist Baker (she’s awesome, check out her food blog!). I had lots of fun making these and I hope you try them too!

I have good news! These are the easiest and quickest no-bake snack bars you might ever make! You just need a food processor and 10 minutes patience for them to set. The recipe:

How to make:

  • Soak the dates in warm water for 10 minutes before throwing into a food processor and blitzing
  • Heat the peanut butter and agave nectar (or maple syrup) on a low heat for 5 minutes and pour into the food processor
  • Gradually add and blitz with all the rest of the dry ingredients until it forms a dough-consistency
  • Pop the mixture into a dish or tupperware container large enough to press down with your fingers to about 1cm thickness
  • Leave in the freezer for 10-15 minutes
  • Take out and cut into bars
  • Store in an airtight container in the freezer or fridge

For anyone who constantly needs something sweet to snack on, you need to make these. Especially if you want a healthy chocolate alternative to take to work to replace the office biscuits. I can’t tell you how filling these are even just one small piece, which makes it easy to avoid buckling for the secret KitKat in the cupboard 😉
